天氣熱得受不了,莊雅惠中醫師表示,夏天養生首重清熱,莊雅惠中醫師推薦夏天可多吃花椰菜、金針菇,除了具有清熱功效之外,花椰菜能生津止渴;金針菇能補氣養血,以下菜餚皆為4~5人份,適合全家一起吃,愈吃愈健康。

2道清熱菜餚

莊雅惠中醫師表示,花椰菜有促進消化、解熱毒等功效,也含有豐富維生素、胡蘿蔔素、纖維質,先準備白花椰菜及綠花椰菜各1碗、枸杞及黃椒各半碗,適量鹽、太白粉、沙拉油、苦茶油及香油,炒鍋中放沙拉油,將食材與鹽、苦茶油、香油一起翻炒,最後加入些許太白粉水,稍勾芡後即可。
金針菇可清熱去濕,也含蛋白質、胡蘿蔔素、纖維質等,準備金針菇1碗、山藥半斤、豬肉絲半碗、紅棗6個、薑3片,適量米酒、太白粉、香菜、鹽及香油,山藥削皮,切塊;豬肉絲加米酒、太白粉及鹽拌勻備用,加2000c.c.水及紅棗,大火煮滾,去除浮沫後改為小火,燉約1小時後,開大火,加入其餘食材,再次煮滾後,加鹽及香油調味,燜約10分鐘,灑上香菜即可食用。


香菜增食欲

夏季炎熱,許多人都會食欲不振,烹調時可加些香菜、蔥,來提高食欲;也不要吃得太油膩、重口味,以免讓身體更燥熱,要盡量清淡,如多吃蒸蛋、燙青菜這類食物,且飲食應定時定量,才不會增加腸胃負擔。
